Blueberry and Banana Pancake Recipe
This recipe is really a ‘use what you have’ in your pantry and fridge recipe. One rule to follow: make sure the total of dry to liquid ratio stays the same. Please feel free to switch things based on what you have. Meaning milk can be skim, whole, buttercream, almond, oat, etc. You can leave out the blueberries. Use whatever type of flour you want and so on.
If you have kids, there are so many ways you can involve your little one in this recipe. There is a lot of mixing, and that is always fun! When it’s time to cook the pancake, this is an adult step. Always watch your little ones in the kitchen.

Wash your hands

Mash 1 ripe banana with a fork

Add 1 cup milk, 2 tablespoons soda water, 2 eggs, 2 teaspoons canola oil and 1 teaspoon vanilla extract to mashed banana and mix

Mix ¾ cup flour, ½ cup almond flour, 2 teaspoons baking powder, 1 teaspoon salt in a separate bowl

Combine the wet and dry ingredients. Then add 1 cup blueberries.
